Let's get one thing straight -- Hattie B's might have broken my scale, and Kitchen Brigade might have been the most unique QC wings I've ever eaten, but these are the best traditional "bar food" chicken wings I've reviewed on this blog. They were a traditional buffalo sauce that was the perfect balance of butter and heat, the size was exactly what you'd expect for real wings that aren't just some monstrosity of inhumane selective breeding, and the texture was superb.
You might be asking yourself "how does a buffalo sauce score a 4/5 in uniqueness?" and that is a very reasonable question. I'm glad to know that my very astute readers would think of such a question because, as you know, I am often not impressed with buffalo sauce. It's for that very reason that these wings scored so highly in uniqueness. It was buffalo done well and not seemingly poured out of a bottle that has been sitting on the shelf at Wal-Mart for the past 5 years. That's hard to come by because so many restaurants just rely on their customers to say "Yep. That's buffalo sauce. That's what I expected." I expect more! And the wings from Bird's Nest in Chicago delivered. Not only that, they had the ideal ratio of flats to drummettes! I join the chorus of Chicagoans who told me I needed to visit Bird's Nest for wings and I recommend it to anyone who enjoys eating wings as much as I do.
